Well everybody, it’s officially March and last weekend I was wearing a coat….and by the end of this week, I think you can wear shorts again. I don’t hate it but I don’t necessarily love it either. I only got to wear my heavy coat ONCE this winter and that was my trip to Montana. LOL. I love the cold so the fact we didn’t get much of it this winter makes me a sad bear. That silly Kansas and it’s weird weather.
Anywho, I guess ‘Ol Man Weather does what he damn well pleases so let us embrace the niceness that is sunshine and warmth coming our way. Let’s enjoy time on our patios, sippin’ fun dranks, and making delicious springy meals. Which brings me to one of my favorite dishes ever: Lemon Chicken & Asparagus. It requires just six ingredients plus salt & pepper (which I hope you have??) and it just SCREAMS “Make me! It’s 70 degrees outside!”
It starts with lightly breading your chicken, which I highly recommend using this technique anytime you make a simple chicken dish. If that seems like a little bit too much work for you, just skip it! Go straight to grilling the chicken. It’s your kitchen, your life, you do YOU, boo! After the chicken is cooked, you put it on a plate and cook the asparagus in the same pan. Let it pick up all the delicious brown bits from the chicken. 20-30 minutes later, BOOM, dinner is served.
