Howdy ho everyone! Today we’re gonna kick it classic style with a good ‘ol chicken caesar salad complete with homemade croutons. If you’ve never made homemade croutons before, don’t ask questions, trust your inner chef and DOOOO IT. Your salads will be all like “Oh em gee, Chef [insert your name here], thank you SO MUCH for making us a million times better with these homemade croutons!” No, my food doesn’t ACTUALLY talk to me and I’m not crazy! I promise! Okay fine…maybe just a little bit. But, I wouldn’t have named my food blog Quirkster Food if I wasn’t the full definition of quirky, crazy & weird 🙂
I make the croutons whenever I have a few pieces of bread at the end of the loaf that are nearing the verge of not being sandwich-worthy. I rip up the slices into crouton-sized pieces, drizzle them in olive oil and toss them in a couple tablespoons of italian seasoning. Bake for about 5-10 minutes at 375 degrees and consider yourself awesome because now you have homemade croutons. I’ve never tried it with other seasonings, but give it a whirl because you can’t really mess them up! Unless of course, you forget to set a timer on the oven and they are now charred pieces of bread. Whoops. Guilty. -raises hand-
So about the rest of this salad…Nick & I have sneezer salads on the reg because it’s one of Nick’s favorite foods of all time. I don’t sneeze in them, but I think it’s funny to call them sneezer salads. I’m quite the fan of caesars myself and it’s a breeze to throw together. Grab some romaine lettuce, chicken, parmesan cheese, (red peppers if they’re on sale!), and a bottle of your fave caesar dressing. I’ve tried several brands and I’ve been sticking to any of them that are made with greek yogurt (cuts back on the cals and fat!). You can find caesar dressings in two places: the normal dressing aisle and in the produce section. I always find the better tasting dressings are in the produce section 🙂 Grill the chicken or do it crockpot style (SO easy) like I have written in the recipe below! No matter how you prefer the chicken, you’re gonna rock this and you are gonna love it and you are gonna do a little happy caesar salad dance.
